Healthier Chocolate, Chocolate Chip Muffins

I told you in my last money saving post that I have tried to eliminate boxed cereal from our home, mainly because of the expense.  I have frozen homemade breakfast burritos and pancakes for another breakfast option.
I thought I'd add more variety to our frozen breakfast choices and this recipe looked like it fit the bill.  I gave it shot and will be making it again here very soon!
Here's what you need and how to do it:
2 1/2 cups all-purpose flour
1 3/4 cups whole wheat flour
1 3/4 cups brown sugar
1/2 cup baking cocoa
1 1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 egg whites
1 egg
2 cups unsweetened applesauce
1 3/4 cups skim milk
2 tablespoons canola oil
2 1/2 teaspoons vanilla
1/4 cups chocolate chips ( I used semi-sweet)
In large bowl, combine the flours, brown sugar, cocoa, salt, baking powder, and soda.
In separate bowl, whisk all wet ingredients together and then add to the dry ingredients.  Fold in chocolate chips.
I just had to show you what my kitchen looks like while I'm trying to bake.  See my muffin makings way over in the corner?  Every time I have to rinse my hands I have to walk through this gang and their stuff!  I wouldn't trade it for the world!!!
Fill lined or greased muffin tins 3/4 of the way full. Bake in preheated 350 degree oven for 18-20 or until inserted toothpick comes out clean.
Cool and serve.  Makes 32 muffins.
I doubled this recipe and then froze these for breakfasts.
They are a hearty, healthier muffin and all my kids LOVED them.  They didn't last long in this house!!

Simple Peanut Butter Cupcakes

I have to share these with you tonight because tomorrow I start my 30 Day Shred.  Ugghhhh, wish me well.  I've had a pretty stressful year and have put on a few several too many pounds recently.  So now, they're comin' off!!
Anyway, I needed to blow it big time before I start this shred and this was the treat of choice. 
Peanut Butter Cupcakes with chocolate frosting are the perfect dessert and they are really simple, different, and delicious!
Here's how you make 'em:
1 package of yellow cake mix
3/4 cup of creamy peanut butter
3 eggs
1 1/4 cup of water
1/4 cup oil
Combine all the ingredients in a bowl and mix on low speed for 30 seconds, then on medium for 2 minutes more.
Fill cupcake papers 2/3 of the way full with batter.
Bake in preheated 350 degree oven for 18-22 minutes.

Let cool thoroughly before frosting with your favorite icing.  I just used a store-bought chocolate...They were WONDERFUL.  A little too wonderful, if you know what I mean!!
I added these little decorations from Lil Luna.  They were the perfect finishing touch as I shared them with the family on Mother's Day!

Bakin' Bacon

Ok, so everyone else in the world may know and do this but I just heard about it and tried it and think it is about the GREATEST thing since well, you know...
I've made bacon several times this past week for recipes and tried to bake it instead of the nasty, painful, grease flyin' method of the past!
Let me say...it was AWESOME!
Line a baking sheet that has sides with foil.
Lay out the bacon and place in oven on center rack.  (Don't preheat)
Turn oven to 400 degrees and bake for 17 to 20 minutes depending on how crispy you like your bacon.
Remove from oven and lay on paper towels to soak up some of the grease (this is just optional...if you like it greasy, don't do this step)
Wait for the grease on your foil to cool a bit and then just throw it away...super easy clean up.
Then enjoy your bacon without the mess, splatters, and burns!
(If you're wondering if it splattered all over the place in my oven...it didn't.
I just cleaned my oven so I was a bit nervous about this...not a problem though.)

Overnight Chicken Enchilada Bake

Two of my favorite things are Mexican food and having dinner prepared long before dinner time.  That's what drew me to this recipe.  I love to be able to prepare a meal ahead of time and just throw it in the oven when we're about ready to eat.
Here's how you make this yummy meal:

Ingredients:
1 lb. boneless skinless chicken breasts, cut into thin bite-size pieces
1 can condensed cream of chicken soup
1 container sour cream
1 can chopped green chiles
2 cans enchilada sauce
12 tortillas quartered
2 cups shredded Cheddar cheese
1/4 cup sliced green onions

Instructions:
Spray 9 x 13 glass baking dish. Heat 10 inch non-stick skillet over medium-high heat. Cook chicken in skillet for 3 to 4 minutes, stirring frequently, until chicken is no longer pink in the center. Remove from heat. Stir in soup, sour cream and chiles.
In baking dish, spread 1/4 cup of enchilada sauce.
Arrange half of tortillas pieces over sauce, overlapping as necessary. Spoon and spread 1 cup enchilada sauce evenly over tortillas. Spread half of chicken mixture over sauce.
Top with 1 cup of the cheese. Repeat layers, starting with tortillas pieces. Cover tightly with foil. Refrigerate at least 8 hrs. or overnight.
   Heat oven to 375 degrees. Bake covered for 30 minutes. Uncover baking dish; bake 20-25 minutes longer or until sauce is bubbly and cheese begins to brown. Let stand (at least)15 minutes before serving. Sprinkle with onions.

Ham and Cheese Sliders

My sister and I love to get the gangs together and we both have some big eaters in our families.  We don't like to spend our time together in the kitchen so we look for fast easy meals to prepare while we're together.  She sent me this recipe to try out recently and we got together to enjoy it.
First you make dinner rolls...I just used the frozen bread dough rolls.  Let them raise, then bake as directed.

Next slice your ham and cheese and fill each roll generously.  (The recipe called for Swiss cheese...I used an Extra Sharp Cheddar 'cuz it's my favorite)
Then combine the mustard, brown sugar, poppy seeds, butter, and Worcestershire sauce and heat on the stove.  You can get the exact measurements here at Women Living Well.
Finally, pour it over the little ham and cheese sandwiches.  Cover and bake at 350 for 20 minutes.
These are wonderful, sweet, salty and savory sandwiches.

Pepperoni Garlic Bread

I love garlic bread so when I came across this recipe  for Mozzarella Pepperoni Bread, I got super excited!
This recipe is right up my alley...super yummy, easy, fast and inexpensive!
I get two loaves of french bread for about $1.50 per loaf.  These will feed all six of us.
Next, I slice the loaves in about 1 inch slices...not all the way through the loaf...you want them to still be attached at the bottom.
Melt a stick of margarine or butter and mix in garlic to taste ( I use about 2 cloves) and 1/4 of a cup of Parmesan cheese.
Spread this mixture on each slice of bread.
Stuff pepperoni in between each of the slices of bread and then top with Mozzarella or Italian Blend cheese.


Bake at 375 for about 15 minutes then just tear apart and enjoy!!
This is a fast, easy meal and it's a lot cheaper than ordering pizza!
Maybe I'll make this again tonight!!
