Icecream Sandwich Cake

Happy, happy birthday to two of my precious boys.  Garreth is 14 and Jared is 12.  Yep, they were born on the same day...just two years apart!  How's that for timing!

They're kinda funny on their birthday...some years they want their own separate cakes, meals, and so on.  Not this year.  They chose corn dogs and curly fries for their birthday dinner and for the cake, they wanted their favorite ice cream cake. You should have seen me checking out at the grocery last night...corn dogs, curly fries, ice cream sandwiches, cool whip, oreos, and cheese spray...I. kid. you. not.
We bought an ice cream cake last month for my oldest son who wanted that for his birthday...but at $26  I thought that was a bit ridiculous.  These two hoodlums think my ice cream cake is better so they asked me to make it. {LOVE IT}
I've shared this recipe here but it's so good and saves a bundle so it's worth mentioning again!
All you need is 12-15 ice cream sandwiches (peanut butter is our favorite), cool whip, and your favorite cookie or candy.  Three simple ingredients and it makes a cool, YUMMY and pretty dessert...just perfect for the months  ahead!
